Carmen Gianfrani
Dr Carmen Gianfrani, is the Head of Mucosal Immunology and Immune Nutrition Laboratory (MIIN LAB) at the Institute of Biochemistry and Cell Biology, National Research Council of Italy (CNR) in Naples, Italy. She is a mucosal immunologist with a long-lasting expertise on the interaction between food proteins and gastrointestinal immune system. Her research is mainly focused on dissection the inflammatory pathways triggered by gluten proteins causing celiac disease, and on defining immunomodulatory strategies to recover oral tolerance to gluten.
